Ingredients
  

  • 2 lb ground beef
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 bell peppers chopped (any color)
  • 2 cans 15 oz each diced tomatoes
  • 2 cups kidney beans drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and bell peppers, and sauté until soft.
  3. Stir in minced garlic and cook for another minute.
  4. Add the ground beef, breaking it up and cooking until browned.
  5. Stir in chili powder, cumin, smoked paprika, salt, and pepper.
  6. Combine diced tomatoes and beef broth, bringing to a simmer.
  7. Add kidney beans and stir well to combine.
  8. Cover and let simmer for at least 30 minutes, stirring occasionally.
  9. Taste and adjust seasoning if necessary, then serve hot.
