Ingredients
  

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 cup mixed vegetables spinach, bell peppers, onions
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil for greasing the baking dish

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a large mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper.
  3. Stir in the vegetables, garlic powder, and half of the shredded cheese until well combined.
  4. Pour the mixture into the greased baking dish and sprinkle the remaining cheese on top.
  5. Bake in the preheated oven for 30-40 minutes, or until set and golden on top.
  6. Let it cool slightly before slicing and serving warm.
