- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a large mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper.
- Stir in the vegetables, garlic powder, and half of the shredded cheese until well combined.
- Pour the mixture into the greased baking dish and sprinkle the remaining cheese on top.
- Bake in the preheated oven for 30-40 minutes, or until set and golden on top.
- Let it cool slightly before slicing and serving warm.
