Bacon, Potato, and Egg Casserole made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 6 slices of bacon chopped
  • 4 medium potatoes diced
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Method

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the chopped bacon over medium heat until crispy. Then, transfer it to a paper towel-lined plate to drain.
  3. In the same skillet, add the diced potatoes and cook until they’re golden brown and tender, about 10-15 minutes.
  4. In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
  5. Stir in the crispy bacon, browned potatoes, and shredded cheese into the egg mixture.
  6. Pour the mixture into a greased 9x13 inch baking dish and spread it out evenly.
  7. Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden.
  8. Let the casserole sit for about 10 minutes after removing it from the oven before slicing and serving.
