In the same skillet, add the diced potatoes and cook until they’re golden brown and tender, about 10-15 minutes.
In a large bowl, whisk together the eggs, milk, salt, pepper, and garlic powder.
Stir in the crispy bacon, browned potatoes, and shredded cheese into the egg mixture.
Pour the mixture into a greased 9x13 inch baking dish and spread it out evenly.
Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden.
Let the casserole sit for about 10 minutes after removing it from the oven before slicing and serving.
