Ingredients
  

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large onion thinly sliced
  • 16 oz cremini or baby bella mushrooms sliced
  • 3 cloves garlic minced
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • 2 tablespoons soy sauce
  • 1/2 teaspoon black pepper
  • 4 hoagie rolls or French bread split
  • 8 slices provolone or Swiss cheese
  • --- Au Jus ---
  • 2 cups vegetable broth or beef broth for richer flavor
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Method
 

  1. In a large skillet, heat butter and olive oil over medium heat.
  2. Add onions and cook for 8–10 minutes until caramelized.
  3. Stir in mushrooms, garlic, thyme, soy sauce, and black pepper. Cook until mushrooms are golden and tender, about 8 minutes.
  4. Preheat oven broiler. Place hoagie rolls on a baking sheet, cut side up. Fill each with mushroom mixture and top with 2 slices of cheese.
  5. Broil 1–2 minutes until cheese is melted and bubbly.
  6. Meanwhile, in a small saucepan, combine vegetable broth, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Bring to a simmer for 5 minutes.
  7. Serve sandwiches hot with au jus on the side for dipping.
