Ingredients
  

  • 2 cups dried black eyed peas
  • 6 cups water
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 large ham hock or smoked turkey leg
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • Salt to taste

Method
 

  1. Rinse the black eyed peas and soak them overnight.
  2. In a large pot, combine the soaked peas, water, diced onion, minced garlic, and ham hock.
  3. Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
  4. Cover and simmer for about 1-1.5 hours or until peas are tender.
  5. Add cayenne pepper, black pepper, and salt to taste during the last 15 minutes of cooking.
  6. Remove the ham hock, shred any meat, and return it to the peas if desired.
  7. Serve warm, garnished if desired, and enjoy!
