Ingredients
  

  • 6 ounces bacon
  • 1 small onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 pound potato gnocchi
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese shredded
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Method
 

  1. Cook the bacon in a large pot until crispy, then remove and crumble.
  2. Sauté the diced onion in the rendered bacon fat until translucent, then add the minced garlic and cook for another minute.
  3. Pour in the chicken broth, bringing it to a boil, then reduce to a simmer.
  4. Add the gnocchi and cook according to package instructions until they float, usually about 2-3 minutes.
  5. Stir in the heavy cream, shredded cheddar cheese, and dried thyme, mixing until the cheese melts and the soup is creamy.
