Ingredients
  

  • 2 medium sweet potatoes about 1 pound
  • 1 1/2 cups all-purpose flour
  • 1 large egg
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg optional
  • Freshly grated Parmesan cheese for serving

Method
 

  1. Prepare the sweet potatoes by roasting them.
  2. Mash the sweet potatoes in a bowl.
  3. Combine the mashed sweet potatoes, egg, flour, salt, and nutmeg.
  4. Knead the dough gently on a floured surface.
  5. Divide the dough and roll out ropes.
  6. Shape the gnocchi with a fork or your fingers.
  7. Cook the gnocchi in boiling water.
  8. Drain and serve the gnocchi.
