Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice
  • 1/4 cup honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Zest of 1 orange

Method
 

  1. Sauté the chicken breasts in olive oil until golden brown.
  2. Remove chicken from the skillet and set aside.
  3. Combine cranberries, orange juice, honey, and Dijon mustard in the skillet.
  4. Return the chicken to the skillet and coat with the sauce.
  5. Add orange zest and season to taste.
  6. Serve the chicken hot, topped with additional sauce and cranberries.
