Ingredients
  

  • 3-4 lbs turkey breast
  • 1 cup fresh cranberries
  • 1 cup orange juice
  • 1/2 cup brown sugar
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary or thyme optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the glaze by combining cranberries, orange juice, brown sugar, Dijon mustard, olive oil, salt, and pepper in a saucepan.
  3. Simmer the glaze over medium heat until the cranberries burst and the mixture thickens, about 10-15 minutes.
  4. While the glaze simmers, prepare the turkey breast by patting it dry and seasoning it with salt and pepper.
  5. Place the turkey breast in a roasting pan and brush half of the glaze evenly over the top.
  6. Roast the turkey breast in the preheated oven for 1.5 to 2 hours, basting with the remaining glaze every 30 minutes.
  7. Remove the turkey breast from the oven and let it rest for at least 15-20 minutes before carving.
  8. Carve the turkey breast and serve it with the remaining glaze drizzled over the top.
