Method
- Cook the bacon in a large pot until crispy.
- Remove the bacon and set aside, leaving the fat in the pot.
- Add diced onion and sauté until soft.
- Stir in the minced garlic and cook briefly.
- Pour in the chicken broth and bring to a boil.
- Add the potato gnocchi and thyme, and simmer until gnocchi float.
- Stir in the heavy cream and shredded cheese.
- Season with salt and pepper, then serve.
