Ingredients
  

  • 4 strips of bacon
  • 1 medium onion diced
  • 2 cloves of garlic minced
  • 4 cups chicken broth
  • 2 cups potato gnocchi
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 cup sharp cheddar cheese shredded
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Method
 

  1. Cook the bacon in a large pot until crispy.
  2. Remove the bacon and set aside, leaving the fat in the pot.
  3. Add diced onion and sauté until soft.
  4. Stir in the minced garlic and cook briefly.
  5. Pour in the chicken broth and bring to a boil.
  6. Add the potato gnocchi and thyme, and simmer until gnocchi float.
  7. Stir in the heavy cream and shredded cheese.
  8. Season with salt and pepper, then serve.
