Ingredients
  

  • 2 pounds of baby potatoes
  • 1 pound of smoked sausage
  • 1 cup of shredded cheddar cheese
  • 1 packet of ranch seasoning mix
  • 1 cup of sour cream
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, combine the halved potatoes and olive oil.
  4. Add the smoked sausage to the bowl and toss together.
  5. Sprinkle the ranch seasoning over the mixture, then add salt and pepper.
  6. Transfer the potato and sausage mixture to a baking dish.
  7. Bake in the preheated oven for 30 minutes.
  8. Remove the dish from the oven and stir in the sour cream and cheddar cheese.
  9. Return the dish to the oven and bake for an additional 10 minutes.
  10. Garnish with fresh parsley before serving.
