Method
- Preheat the oven to 350°F (175°C).
- Boil the sweet potatoes until fork-tender.
- Drain the sweet potatoes and mash until smooth.
- In a large bowl, combine the mashed sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg.
- Pour the sweet potato mixture into a greased baking dish.
- Sprinkle mini marshmallows and chopped pecans on top.
- Bake for about 25-30 minutes or until the marshmallows are golden brown.
- Remove from oven and let it cool slightly before serving.
