Creating a Comforting Sweet Potato Casserole

Ingredients
  

  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes until fork-tender.
  3. Drain the sweet potatoes and mash until smooth.
  4. In a large bowl, combine the mashed sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg.
  5. Pour the sweet potato mixture into a greased baking dish.
  6. Sprinkle mini marshmallows and chopped pecans on top.
  7. Bake for about 25-30 minutes or until the marshmallows are golden brown.
  8. Remove from oven and let it cool slightly before serving.
