Preheat your oven to 425°F (220°C).
Wash and dry the baby potatoes thoroughly.
Cut the baby potatoes in half, or quarters, if larger.
In a large mixing bowl, combine the olive oil, minced garlic, Parmesan cheese, salt, and pepper.
Add the potatoes to the mixing bowl and toss until evenly coated.
Spread the potatoes evenly on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes or until golden brown and crispy.
Remove from oven and garnish with chopped parsley, if desired.
