These Crispy Garlic Parmesan Roasted Potatoes offer a delightful crunch and a burst of savory flavor, making them an ideal side dish for any festive gathering.

Ingredients
  

  • 2 pounds baby potatoes
  • 4 tablespoons olive oil
  • 6 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: fresh parsley chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the baby potatoes thoroughly.
  3. Cut the baby potatoes in half, or quarters, if larger.
  4. In a large mixing bowl, combine the olive oil, minced garlic, Parmesan cheese, salt, and pepper.
  5. Add the potatoes to the mixing bowl and toss until evenly coated.
  6. Spread the potatoes evenly on a baking sheet lined with parchment paper.
  7. Roast in the preheated oven for 25-30 minutes or until golden brown and crispy.
  8. Remove from oven and garnish with chopped parsley, if desired.
