  • 1 lb boneless skinless chicken thighs
  • 2 medium poblano peppers
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 8 corn tortillas
  • 1 ripe avocado
  • 1 jalapeño minced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Method
 

  1. Preheat the Oven to 400°F (200°C) and Prepare the Chicken.
  2. Prepare the Poblano Peppers.
  3. Bake the Chicken.
  4. Make the Avocado-Jalapeño Salsa.
  5. Char the Corn Tortillas.
  6. Slice the Chicken and Assemble the Tacos.
