Ingredients
  

  • 1 1/2 cups ricotta cheese
  • 1 cup granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup vegetable oil

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large mixing bowl, combine the ricotta cheese and sugar until smooth.
  4. Add in the eggs, vegetable oil, and vanilla extract; mix until well combined.
  5. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the ricotta mixture, folding gently until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake for 30 to 35 minutes or until a toothpick comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  10. Serve warm or at room temperature, optionally dusting with powdered sugar or cocoa.
