Prepare the stuffing by mixing crab meat, shrimp, cream cheese, breadcrumbs, parsley, lemon juice, garlic powder, salt, and pepper in a bowl.
Slice a pocket into the side of each salmon fillet, being careful not to cut all the way through.
Stuff each salmon fillet generously with the crab and shrimp mixture, securing with toothpicks if necessary.
Place the stuffed salmon fillets on a greased baking dish, then drizzle with olive oil and season with additional salt and pepper.
Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
Remove from the oven and let cool for a few minutes before serving.
