Ingredients
  

  • 1 cup pumpkin purée
  • 1 cup almond flour
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup dark chocolate chips
  • Pinch of salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin purée, almond flour, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
  3. Fold in the dark chocolate chips gently.
  4. Chill the mixture in the refrigerator for about 30 minutes.
  5. Using a spoon or cookie scoop, portion out the mixture and roll into balls.
  6. Place the rolled truffles on a parchment-lined baking sheet.
  7. Chill again for about 1 hour until set.
