  • 2 pounds baby potatoes
  • 3 tablespoons olive oil
  • 1 lemon zested and juiced
  • 3 cloves garlic minced
  • 1 teaspoon dried rosemary

  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. In a large mixing bowl, combine the olive oil, lemon juice, garlic, rosemary, thyme, salt, and black pepper.
  4. Add the halved potatoes to the bowl and toss to coat them thoroughly.
  5. Spread the potatoes on a baking sheet in a single layer.
