Deliciously Bite-Sized Mini Pecan Pies to Impress

Ingredients
  

  • 1 cup pecans chopped
  • 1/2 cup light corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 package refrigerated pie crusts about 14 oz

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the pie crust and cut into circles.
  3. Place the circles into a mini muffin tin.
  4. In a bowl, mix the corn syrup, brown sugar, eggs, vanilla extract, and salt.
  5. Add the chopped pecans to the mixture and stir well.
  6. Pour the pecan filling into the crusts, filling each about three-quarters full.
  7. Bake for 20-25 minutes, until the filling is set.
  8. Let the pies cool before removing them from the tin.
