Method
- Preheat your oven to 350°F (175°C).
- Roll out the pie crust and cut into circles.
- Place the circles into a mini muffin tin.
- In a bowl, mix the corn syrup, brown sugar, eggs, vanilla extract, and salt.
- Add the chopped pecans to the mixture and stir well.
- Pour the pecan filling into the crusts, filling each about three-quarters full.
- Bake for 20-25 minutes, until the filling is set.
- Let the pies cool before removing them from the tin.
