Deliciously Cheesy Corn Fritters Recipe

Crispy on the outside and gooey on the inside, these Cheesy Corn Fritters are a delightful addition to any gathering, bursting with flavor and comfort.

Ingredients
  

  • 2 cups fresh corn kernels
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 2 large eggs
  • 1/4 cup scallions finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Method
 

  1. Prepare the corn kernels.
  2. In a large mixing bowl, combine dry ingredients.
  3. Mix in the wet ingredients.
  4. Combine wet and dry ingredients.
  5. Heat oil in a frying pan over medium heat.
  6. Drop spoonfuls of batter into the hot oil.
  7. Fry the fritters until golden brown.
  8. Remove fritters and drain.
  9. Serve warm or at room temperature.
