In a large bowl, mix mashed sweet potatoes, granulated sugar, brown sugar, and oil
Add the eggs and vanilla extract to the mixture, and beat well
In a separate bowl, whisk together flour, baking powder, cinnamon, and salt
Gradually fold the dry ingredients into the wet mixture until just combined
Scoop the batter into the prepared muffin tin
Bake for 18-22 minutes or until a toothpick comes out clean
Let them cool in the tin for 5 minutes before transferring to a wire rack
