Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup almond flour
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil melted
  • 2 teaspoons pumpkin pie spice
  • 1/4 cup dark chocolate chips
  • 1/4 teaspoon salt

Method
 

  1. In a mixing bowl, combine the pumpkin puree and melted coconut oil.
  2. Add the almond flour, maple syrup, pumpkin pie spice, and salt to the bowl.
  3. Chill the mixture in the refrigerator for about 30 minutes.
  4. Once chilled, scoop out tablespoon-sized portions and roll them into balls.
  5. Roll each ball in the dark chocolate chips to coat.
  6. Let the truffles set in the fridge for another 30 minutes before serving.
