Method
- In a mixing bowl, combine the pumpkin puree and melted coconut oil.
- Add the almond flour, maple syrup, pumpkin pie spice, and salt to the bowl.
- Chill the mixture in the refrigerator for about 30 minutes.
- Once chilled, scoop out tablespoon-sized portions and roll them into balls.
- Roll each ball in the dark chocolate chips to coat.
- Let the truffles set in the fridge for another 30 minutes before serving.
