Deliciously Layered Mexican Beef Casserole

Layered Mexican Beef Casserole made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 1 pound ground beef
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 6 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • Fresh cilantro for garnish

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned.
  3. Drain excess fat from the skillet and stir in black beans, diced tomatoes, chili powder, cumin, and garlic powder.
  4. Spread a thin layer of the beef mixture in the bottom of a casserole dish.
  5. Layer two corn tortillas over the beef mixture, followed by half of the remaining meat and then one cup of shredded cheese.
  6. Repeat with another layer of tortillas, the remaining beef mixture, and the rest of the cheese.
  7. Cover the casserole with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Allow the casserole to cool for a few minutes before serving.
  10. Serve with sour cream and fresh cilantro on top.
