Ingredients
  

  • 12 ounces ziti pasta
  • 3 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 zucchini diced
  • 1 cup mushrooms sliced
  • 2 cups spinach
  • 1 jar 24 ounces marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ziti pasta according to package instructions until al dente; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onions and cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Add the diced bell pepper, zucchini, and sliced mushrooms to the skillet; cook for 5-7 minutes until tender.
  6. Stir in the spinach, marinara sauce, oregano, basil, and red pepper flakes; simmer for 5 minutes.
  7. In a large bowl, combine the drained pasta, ricotta cheese, and vegetable sauce. Mix until well combined.
  8. Transfer the pasta mixture to a greased 9x13 inch baking dish; spread evenly.
  9. Top with shredded mozzarella and grated Parmesan cheeses.
  10. Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  11. Let the baked ziti rest for 10 minutes before serving.
