Ingredients
  

  • 2 medium zucchinis sliced
  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced zucchinis and sauté for about 5-7 minutes until slightly tender.
  4. Stir in the drained chickpeas, garlic powder, oregano, salt, and pepper.
