Ingredients
  

  • 16 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped green onions
  • 1/2 cup diced red bell pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup finely chopped walnuts
  • Orange food coloring
  • Fresh parsley for garnish

Method
 

  1. In a large mixing bowl, combine cream cheese, cheddar cheese, and Parmesan cheese until well blended.
  2. Add in green onions, diced red bell pepper, garlic powder, onion powder, and walnuts; mix until evenly distributed.
  3. Gradually add orange food coloring, mixing until the desired pumpkin color is achieved.
  4. Shape the cheese mixture into a ball and wrap it in plastic wrap; refrigerate for at least 2 hours to firm up.
  5. Once chilled, unwrap the cheese ball and roll it in chopped walnuts for a textured exterior.
  6. Place the cheese ball on a serving platter and garnish with parsley to resemble a pumpkin stem.
  7. Serve with an assortment of crackers, veggie sticks, or pretzels for dipping.
