  • 1 box strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 cup white chocolate chips
  • 1/2 cup chopped strawberries fresh or frozen
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cake mix, eggs, and vegetable oil until fully blended.
  3. Stir in the white chocolate chips and chopped strawberries gently.
  4. Using a cookie scoop, drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes or until the edges are lightly golden.
  6. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
