Ingredients
  

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 cups cream cheese softened
  • 1 cup powdered sugar
  • 2 cups fresh strawberries pureed
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 cup crispy cereal
  • 1 tablespoon sugar

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter, mixing until evenly moistened.
  3. Press the crust mixture into the bottom of a 9-inch springform pan, ensuring an even layer.
  4. Bake the crust in the preheated oven for 8-10 minutes until lightly golden, then remove and let cool.
  5. In a large bowl, beat the softened cream cheese until smooth and creamy, about 2-3 minutes.
  6. Gradually add powdered sugar and vanilla extract, mixing until well combined.
  7. Blend in the strawberry puree until the mixture is smooth and fully integrated.
  8. Gently fold in the whipped cream until fully combined, being careful not to deflate the mixture.
  9. Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.
  10. Bake in the oven for 50-60 minutes, or until the center is set but still jiggly.
  11. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  12. Remove the cheesecake from the oven, refrigerate for at least 4 hours, preferably overnight.
  13. Before serving, mix crispy cereal with sugar and sprinkle it over the top.
