In a medium bowl, combine the chopped strawberries and sugar.
Roll out the puff pastry and cut into squares.
Make the cream cheese filling by mixing cream cheese, powdered sugar, and vanilla extract until smooth.
Assemble the Danish by placing cream cheese filling and strawberry mixture on the pastry squares.
Fold the corners of the pastry squares toward the center and pinch to seal.
Brush the tops with beaten egg and sprinkle with coarse sugar if desired.
Bake in the preheated oven for 15-20 minutes or until golden.
Allow to cool slightly before serving.
