Ingredients
  

  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the baby potatoes in half, if necessary.
  3. In a mixing bowl, combine melted butter, olive oil, minced garlic, smoked paprika, salt, and pepper. Stir until well mixed.
  4. Toss the halved potatoes in the buttery mixture until well coated.
  5. Spread the potatoes out on a baking sheet in a single layer.
  6. Roast the potatoes in the oven for 25-30 minutes, flipping halfway through.
  7. Check for doneness by piercing a potato with a fork; it should be tender.
  8. Remove from the oven and sprinkle with fresh parsley before serving.
