Ingredients
  

  • 12 oz fettuccine or penne pasta
  • 14 oz smoked sausage sliced into rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sliced smoked sausage. Cook until browned on both sides, about 4–5 minutes.
  3. Add garlic and bell peppers, sautéing for 2–3 minutes until softened.
  4. Stir in Cajun seasoning and smoked paprika.
  5. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  6. Stir in Parmesan cheese until sauce is smooth and creamy. Season with salt and pepper to taste.
  7. Add cooked pasta to the skillet and toss to coat. If sauce is too thick, add a splash of reserved pasta water.
  8. Simmer for 2–3 minutes until pasta is well coated and heated through.
  9. Garnish with fresh parsley and serve hot.
