Ingredients
  

  • 12 ounces pasta
  • 3 large onions
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons chili oil
  • 1/4 cup grated Parmesan cheese
  • Fresh basil for garnish

Method
 

  1. Cook the pasta according to package instructions.
  2. Prepare the onions by slicing them thinly.
  3. Heat olive oil in a large skillet over medium heat, and add the sliced onions with salt.
  4. Caramelize the onions, stirring frequently, for 25-30 minutes until golden.
  5. Add black pepper and red pepper flakes to the onions, cooking for another 2-3 minutes.
  6. Add the cooked pasta to the onion mixture, tossing to combine.
  7. Drizzle in the chili oil and a little reserved pasta water as needed, tossing to coat.
  8. Serve topped with grated Parmesan and fresh basil.
