Flavorful Cranberry Orange Chicken for Every Occasion

Ingredients
  

  • 2 lbs chicken thighs
  • 1 cup fresh cranberries
  • 1 medium orange juiced and zested
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Season chicken thighs with salt, pepper, and rosemary before placing them in the skillet.
  4. Sear the chicken thighs for about 6-7 minutes on each side until browned.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, combine cranberries, orange juice, orange zest, chicken broth, brown sugar, and soy sauce.
  7. Bring the sauce to a simmer, then return the chicken to the skillet.
  8. Spoon some sauce over the chicken and transfer the skillet to the preheated oven.
  9. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  10. Let the chicken rest for 5 minutes before serving.
  11. Serve the chicken drizzled with the cranberry orange sauce.
