Ingredients
  

  • 1 wheel of Brie cheese about 8 oz
  • 1 cup unsalted pistachios shelled
  • 3 tablespoons honey
  • 1 teaspoon fresh rosemary finely chopped
  • Salt and pepper to taste
  • Baguette slices or crackers for serving

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pistachios by grinding them roughly. Leave some larger chunks for added texture.
  3. In a bowl, combine the crushed pistachios, honey, rosemary, salt, and pepper. Mix well to coat all ingredients evenly.
  4. Slice the Brie wheel in half horizontally, creating two equal halves. This allows for more surface area for the toppings.
  5. Layer the pistachio mixture evenly over one half of the Brie, pressing gently to ensure it sticks. Top with the second half of the Brie.
  6. Place the Brie on a baking sheet lined with parchment paper, then bake for about 15 minutes or until gooey and golden.
  7. Remove from the oven and let it cool for a few minutes before slicing. This allows the cheese to stabilize slightly for easier serving.
  8. Serve warm with baguette slices or crackers for dipping.
