Ingredients
  

  • 2 medium sweet potatoes peeled and diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 avocado diced
  • 1 lime juiced
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with cumin, smoked paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
  4. While the sweet potatoes are roasting, prepare the black beans.
