Ingredients
  

  • 1 pound ground beef
  • 2 medium sweet potatoes diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced (red or green)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro chopped (optional)

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and sauté until they become translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Incorporate the ground beef and brown it for about 5-7 minutes.
  5. Add diced sweet potatoes, bell pepper, cumin, smoked paprika, and chili powder, stirring to combine.
  6. Cover the skillet and reduce the heat to low, allowing it to simmer for 15-20 minutes until the sweet potatoes are tender.
  7. Once the sweet potatoes are tender, season with salt and pepper to taste.
  8. Serve hot, garnished with chopped cilantro if desired.
