Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 medium apples diced
  • 4 ounces Brie cheese diced
  • 1/2 cup walnuts chopped
  • 1 tablespoon fresh thyme chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup chicken broth

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the stuffing by combining diced apples, Brie, walnuts, thyme, salt, and pepper in a large bowl.
  3. Make a pocket in each chicken breast using a sharp knife.
  4. Stuff each chicken breast with the apple and Brie mixture.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear the stuffed chicken breasts for about 4-5 minutes on each side until golden brown.
  7. Add chicken broth to the skillet and transfer it to the preheated oven.
  8. Bake for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  9. Let the chicken rest for 5 minutes before slicing.
  10. Serve warm, garnished with additional thyme if desired.
