Ingredients
  

  • 4 large sweet potatoes peeled and cubed
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup mini marshmallows
  • 1/2 cup pecans chopped (optional)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Boil the sweet potatoes until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Stir in sugar, melted butter, milk, eggs, vanilla, cinnamon, and nutmeg.
  5. Transfer the mixture into a greased baking dish.
  6. Top with mini marshmallows and chopped pecans (if using).
  7. Bake for 25-30 minutes, or until the marshmallows are golden brown.
  8. Remove from the oven and let cool slightly before serving.
