Double Chocolate Cookies made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips

Method

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually blend the dry mixture into the creamed butter mixture until just combined.
  6. Fold in the chocolate chips gently with a rubber spatula.
  7. Scoop tablespoon-sized balls of dough onto parchment-lined baking sheets, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers remain soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to wire racks.
