Indulgent Cheesy Root Vegetable Gratin Recipe

Ingredients
  

  • 2 large potatoes thinly sliced
  • 2 large carrots thinly sliced
  • 1 large parsnip thinly sliced
  • 1 small sweet potato thinly sliced
  • 2 cups heavy cream
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme chopped
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Prepare your baking dish by greasing it with butter.
  3. In a large mixing bowl, combine all sliced root vegetables, garlic, thyme, salt, and pepper.
  4. Layer half of the vegetable mixture evenly in the prepared baking dish.
  5. Pour half of the heavy cream over the first layer, followed by half of the Gruyère and Parmesan cheese.
  6. Repeat the layering process with the remaining vegetables, followed by the remaining cream and cheeses.
  7. Cover the baking dish with foil and bake for 35 minutes.
  8. Remove the foil and bake for an additional 20-25 minutes, or until the top is golden brown.
  9. Let the gratin rest for 10 minutes before serving.
