Indulgent Pan-Seared Salmon with Creamy Florentine Sauce

Ingredients
  

  • 2 salmon fillets 6 ounces each
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic minced
  • Juice of 1/2 lemon

Method
 

  1. Season both sides of the salmon fillets with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the salmon fillets to the skillet, skin-side down.
  4. Cook for about 4-5 minutes until golden brown, then flip.
  5. Continue cooking for another 4-5 minutes until the salmon is cooked through.
  6. Remove the salmon from the skillet and set aside.
  7. In the same skillet, add minced garlic and sauté for about 30 seconds.
  8. Add the spinach and cook until wilted.
  9. Pour in the heavy cream and bring to a simmer.
  10. Stir in Parmesan cheese and lemon juice, then season to taste.
  11. Return the salmon to the skillet, spooning sauce over it.
  12. Serve immediately and enjoy your dish.
