Preheat the oven to 350°F (175°C).
In a medium bowl, combine the graham cracker crumbs and melted butter until fully mixed.
Press the crumb mixture into the bottoms of serving cups or small glasses.
In a separate bowl, mix together the diced apples, granulated sugar, brown sugar, and cinnamon.
Spoon the apple mixture over the prepared crusts in the cups.
Drizzle caramel sauce over the apples, making sure to coat them well.
Bake the cups in the preheated oven for 20-25 minutes, until the apples are tender.
Remove from the oven and let cool for 10 minutes before serving.
Top with whipped cream just before serving, if desired.
