Ingredients
  

  • 1 cup pumpkin purée
  • 1 cup brown sugar
  • 1/2 cup maple syrup
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8x8-inch baking dish by greasing it or lining it with parchment paper.
  3. In a large mixing bowl, combine the melted butter, brown sugar, and maple syrup until smooth.
  4. Add in the eggs and vanilla extract, mixing until well combined.
  5. In another bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Fold in the pumpkin purée until the mixture is smooth.
  8. Pour the batter into the prepared baking dish, spreading it evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the blondies to cool in the pan for 10 minutes before transferring to a wire rack.
  11. Once cooled, cut the blondies into squares and enjoy!
