Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup unsalted butter
  • 1/4 cup chopped pecans or walnuts optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9x13 inch baking pan.
  3. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. In another bowl, combine the granulated sugar, brown sugar, pumpkin puree, oil, eggs, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  7. In a separate bowl, combine the rolled oats, melted butter, and nuts (if using) for the crumble topping.
  8. Sprinkle the crumble topping evenly over the batter in the baking pan.
  9. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for about 15 minutes before slicing.
  11. Serve warm or at room temperature, garnished with whipped cream if desired.
