In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs, one at a time, to the butter and sugar mixture, mixing well after each addition.
Mix in the sour cream and peppermint extract until fully combined.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the chocolate chips.
Pour the batter into the prepared loaf pan, smoothing the top.
Bake in the preheated oven for 50-60 minutes, or until a toothpick comes out clean.
Remove from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack.
