Mastering the Art of Classic Roast Turkey

Ingredients
  

  • 1 whole turkey 12-14 pounds
  • 1/2 cup unsalted butter softened
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 2 cups low-sodium chicken broth
  • 4 cups cubed bread preferably stale
  • 1 medium onion chopped
  • 2 stalks celery chopped
  • 1 tablespoon fresh sage chopped
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh rosemary chopped
  • Juice of 1 lemon
  • 1/2 cup white wine optional

Method
 

  1. Thaw the turkey if frozen.
  2. Prepare the brine and season the turkey.
  3. Prepare the stuffing.
  4. Preheat your oven to 325°F (165°C).
  5. Stuff the turkey cavity loosely.
  6. Truss the turkey and place it in a roasting pan.
  7. Rub softened butter over the skin and season with pepper.
  8. Roast in the oven, basting periodically with broth.
  9. Remove from the oven and rest before carving.
  10. Carve and serve your turkey.
