- Peel and grate the sweet potatoes.

- Heat olive oil in a skillet over medium heat.
- Add the sweet potato mixture to the skillet and flatten it out.
- Cook until golden brown, then flip and cook the other side.
- Remove from heat and garnish with herbs if desired.
