  • 1 small onion finely chopped
  • 1/2 bell pepper diced
  • 2 tablespoons olive oil

Method
 

  1. Peel and grate the sweet potatoes.
  2. Rinse the grated sweet potatoes.
  3. Combine sweet potatoes, onion, and bell pepper in a bowl.
  4. Season the mixture with salt and pepper.
  5. Heat olive oil in a skillet over medium heat.
  6. Add the sweet potato mixture to the skillet and flatten it out.
  7. Cook until golden brown, then flip and cook the other side.
