Ingredients
  

  • 1 lb chicken breast cubed
  • 4 cups cooked rice preferably day-old
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 green onions chopped
  • 3 cloves garlic minced
  • 2 large eggs beaten
  • 4 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Method
 

  1. Preheat your Blackstone griddle to medium-high heat.
  2. Add a bit of oil to the griddle, then add the cubed chicken breast.
  3. Season the chicken with a pinch of salt and pepper, and cook until no longer pink, about 5-7 minutes.
  4. Push the cooked chicken to one side of the griddle, and in the cleared space, add the minced garlic and mixed vegetables.
  5. Once the vegetables are tender, push them aside and pour the beaten eggs into the empty space.
  6. Combine the chicken, vegetables, and eggs together on the griddle and mix thoroughly.
  7. Add the cooked rice to the griddle, breaking up any clumps and spreading it evenly.
  8. Drizzle the soy sauce and sesame oil over the rice, and stir well to combine all ingredients evenly.
  9. Finish by adding the chopped green onions, and adjust seasoning with salt and pepper to taste.
  10. Serve hot on plates or in bowls, and enjoy your homemade chicken fried rice.
