Refreshing Mediterranean Couscous Salad Recipe

Fresh vegetables, tangy feta, and Mediterranean herbs combine in a vibrant Couscous Salad, making it a delightful addition to summer picnics and potlucks.

Ingredients
  

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1/2 cup cherry tomatoes halved
  • 1/2 cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Prepare the couscous by adding it to a bowl and pouring boiling water over it.
  2. While the couscous is resting, chop the vegetables and herbs.
  3. In a separate bowl, combine the olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  4. After the couscous has rested, fluff it with a fork and add it to a large mixing bowl.
  5. Add the chopped tomatoes, cucumber, red onion, olives, feta, and parsley to the couscous.
  6. Pour the dressing over the salad and toss everything together until well combined.
  7. Taste and adjust seasoning as necessary before serving.
  8. Serve the salad chilled or at room temperature.
