Rich and Creamy Slow Cooker Beef Stroganoff

Hearty Slow Cooker Beef Stroganoff made approachable with clear cues, pantry staples, and flexible swaps.

Ingredients
  

  • 2 pounds beef chuck roast cut into 1-inch pieces
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 cup sour cream
  • Salt and pepper to taste
  • 12 ounces egg noodles

Method
 

  1. Prepare the beef and vegetables
  2. Sear the beef (optional)
  3. Add ingredients to the slow cooker
  4. Cook on low for 7-8 hours or high for 4-5 hours
  5. Stir in the sour cream
  6. Cook for an additional 30 minutes
  7. Prepare the egg noodles
  8. Serve and enjoy
